Mai Tai - the original recipe?Mai Tai

This is an internationally popular drink originating from a trader - "Victor". The same person responsible for the popular Tiki whirlwind that is the Trader Vic's restaurant brand. The drink will conger up exotic images of beaches and palms - perhaps why it is so often laden with garnishes from flowers to umbrellas to sparklers. There are so many different recipes for the Mai Tai available - some highly complex, others reasonably simple. We believe that this is the original recipe that was brought back from the Pacific - it is certainly a delicious cocktail when made this way.

  50ml White or Golden Rum
  12.5ml Cointreau
  12.5ml Amaretto
  12.5ml Sugar Syrup
  2 limes each cut into 6 wedges

Muddle all but 3 of the wedges into a shaker glass. Add ice and the the rest of the ingredients, then shake. Strain the mixture into a tumbler filled with ice. Before serving, gently squeeze the remaining lime wedges over the drink and then drop them in.
