Get a large “glassjar” (or we can make do with a bottle), fill with fresh root ginger cut in half (or to whatever size will pass through the neck of the bottle), then top up with white rum. Seal the bottle, then let it stand for two weeks, rolling or gently swirling the bottle twice a day. After two weeks the rum will take a light golden colour and it is ready to drink. If you want to stop the flavour developing at this point, remove the ginger or pour the flavoured rum into another bottle.
